Stanton Schofield Bundy III died peacefully at his home in Bandera, Texas, Saturday, September 3, 2022. He was 74.
Bundy was born May 1, 1948 in Sonora, Texas, the son of Stanton S. Bundy II and Mary Ella Bundy.
Bundy studied at Austin College and the Instituto Technologico y de Estudias Superiores de Monterrey and finished Magna Cum Laude at Tarleton State University (1998-2000).
Bundy was mayor of Hico from 2000 to 2005. His was the original idea for the Texas Steak Cookoff in 2003, which grew to become Hico’s largest annual citywide event each May. He formed the first Texas Steak Cookoff committee to organize the event with less than a half dozen volunteers and a tiny budget.
While mayor, Bundy successfully pushed for the creation of a full time paid city administrator post for the first time in 2005. Bundy resigned as mayor here in October of 2005 and moved for a time to west Texas where he had longtime family roots and later New Orleans and Arizona and then Bandera.
He was restaurant entrepreneur and wholesale marketer and retailer of Mexican imports. He was key in implementing and adopting chili as the official Texas state food.
Stan enjoyed spending time with his grandchildren and watching his children grow up and become successful. He also spent years organizing and tracing family heritage. He spent much time fishing, exploring Texas and the hill country, and taking trips on Devils River in Mexico.
Bundy was preceded in death by his wife, Carol Jones Bundy; his mother and father; and sister Margaret Elizabeth Dempsey.
He is survived by son Stanton S. Bundy IV; daughter Nicole Tavernier; daughter-in-law Faith Bundy; son-in-law Chris Tavernier; granddaughters Kylie Toon, Elizabeth and Mary-Ella Bundy; grandson Hunter Toon; and brother Richard Bundy and spouse Merri; and sister Lucy Jones and spouse Don.
Visitation was set for Saturday, Sept. 10, 1:30-2:30 p.m at Harvest Hills Funeral Home in Hico, with graveside services to follow at Hico Cemetery at 3 p.m.
